Painting in watercolour is a more time consuming process than pastels; what can be achieved by a few deft strokes of pastel on a well chosen background, can take an age of painstakingly building up layer upon layer in watercolour. However, the results are a much softer, 'luminous' portrait - watercolours are fabulous for describing light and picking up the subtle colours of a subject (particularly when the subject is an all white dog!).
